For Hunter Skills & Safety and Hunter Decision-Making, one of the best resources for adults and kids to study is The Hunter's Guide, available for purchase from the NRA for $10: http://materials.nrahq.org/go/products.aspx?cat=Hunting_books_booklets_handbooks
For boning up on Wildlife ID & Mgmt., a good place to start is the inexpensive 4-booklet set of "An Illustrated Guide to ..." that are available from Federal Cartridge Company. These can be purchased in bulk for your club: http://www.federalpremium.com/hunters_education/educational_materials.aspx
Another helpful item would be a basic book on topo maps & the use of the compass. And don't forget to pick up several copies of the free "Outdoor Annual" booklet provided by TPWD, next time you go to Wal-Mart or Academy. This is the best source for learning the TX hunting rules and regulations.
